Passito

In Arabic Amuna, means “to be faithful” and it is a name that represents well the tradition of growing passito grapes. This story is one with that of the island. A taste at the same time sweet and strong, like the land from which it springs.
Passito is an extraordinary nectar, which has been produced for centuries only on the island of Pantelleria. The zibibbo vine is grown, without support, in small hollows dug into the ground, where the grapes grow sheltered from the foliage and dried naturally by the sun. Dried grapes are then added to fermenting must from fresh grapes. Special techniques of vinification and aging both in steel and in bottle eventually produce our passito. It is an amazing meditation wine, sweet and aromatic, with a distinctive Muscat scent.
Perfect combined with dried pastries and cakes, but also with chocolate, ricotta cheese, blue cheese and almond sweets.

Zibibbo Raisins

Muscat of Alexandria or Zibibbo is a prized grape variety originally from Egypt, now present in the warmest Mediterranean areas. It is used in the production of sweet wines and dried grapes.
The name Zibibbo (as used in Sicily) comes for some authors from the Egyptian town of El Zibibb where it appeared for the first time, while for others comes from the North African word Zibibb, meaning raisins, for its suitability to the drying process (passitura).
The Zibibbo grape is famous for the distinctive aromatic note of the wine that is produced from it.

 

Name: Zibibbo “Muscat” grape

 

Directions for use: try them with any well-aged or fresh goat cheese. Excellent dipped in a glass of Passito di Pantelleria for dessert, in a vanilla ice cream or with yoghurt.

 

Expiry date: eat within 15 days from opening.

Zibibbo Wine

Sharab is an ancient word that has come down from Persian to modern Arabic. It describes the act of drinking and particularly that of drinking wine. To us it represents the color that brightens the dining table and the eyes of those who choose Zibibbo wine to celebrate a special occasion with a unique flavor.
Made from the precious Zibibbo grape, this wine represents the culture of the Mediterranean. Its most distinctive features are the straw color and the sweet and fruity flavor leaving an aromatic and elegant aftertaste. Ideally paired with fish, shellfish and white meat.
Drink it chilled.

Nectar from
Zibibbo grapes

Grape nectar is one of the traditional products from Pantelleria. It is obtained from boiling the Zibibbo grape flower must, using only traditional methods. During the procedure, sugar is added to the puree of Zibibbo grapes. The compound so produced is then simmered.
Zibibbo nectar is a sort of honey, strictly handmade without the addition of any colorants and/or additives.

Serving suggestions: traditional use is in combination with spicy cheese, either aged or fresh, but it can also go with fish and meat. Its taste, distinctively sweet, makes it the ideal companion to yoghurt and ice cream..

Ingredients: Fresh Zibibbo grape must (55%), sugar.
